Blueberry Muffins
Ingredients
12 1/2 ounces cake flour
1 teaspoon baking soda
2 teaspoons baking powder
Heavy pinch salt
1 cup sugar
1/2 cup vegetable oil
1 egg
1 cup yogurt
1 1/2 cups fresh blueberries
Vegetable spray, for the muffin tins
Directions
Preheat oven to 380 degrees F.
In a large bowl sift together the flour, baking soda, baking powder, and salt and set aside.
In another large bowl, whisk together the sugar, oil, egg and yogurt. Add the dry ingredients reserving 1 tablespoon of the dry ingredients and toss with the blueberries. Stir mixture for a count of 10. Add 1 cup blueberries to mixture and stir 3 more times. Reserve the 1/2 cup of blueberries.
Using a #20 ice cream scoop, add the mixture to greased muffin pans. Sprinkle the remaining 1/2 cup of berries on top of muffins and press down lightly. Place into the oven and increase the temperature to 400 degrees. Bake for 20 to 25 minutes, rotating pan halfway through. Remove from oven and turn out, upside down on tea towel to cool completely. Serve immediately or store in airtight container for 2 to 3 days.
Glad to be back home
I am glad to be back home, I missed Smoka lots!! We decided to leave the grandparents house Saturday around 5pm. Sleeping on a sleeper sofa is enough after a few days. The daughter was being really good, however I knew rain was in the forecast. I figured why not drive home Saturday evening vs. Sunday Morning. The traffic was great, we hit none. We arrived home around 9pm, right in the middle of a bad storm. I had hopes of letting the daughter go into the house first, to suprise Daddy and Pappy. The storm was right overhead, so I had to go in and get an umbrella. It was pouring down rain, so Daddy went out to the car to get his Chickie.
She was so happy to see daddy, almost as happy as he was to see her. It was so cute seeing her hang all over her daddy.
The visit was great! I really enjoyed spending time with my grandparents and seeing their house. I would do it again, however 2 days is more than enough time for me. I had packed a book to read, however chasing after a 3 1/2 year old allows no time for reading. She had lots of area to run around in, but I am the type of mom that is always doing my best to watch her. I know my daughter and can just imagine what she would try if I wasn't constantly watching.
